A New Chef is in Town

The obligatory introductory post for any new blog. Just a little bit about who we are, what we're up to, and why we're excited about coming to the neighborhood.

Who are we?

Root 174 is a contemporary bistro in Regent Square serving “cultivated comfort food.” Chef-owner Keith Fuller comes from a six-year stint as the Executive Chef of Six Penn Kitchen, and was born in Delaware and has lived in Luxembourg, Ohio and Philadelphia where he worked at Jake’s, a four-star restaurant in Manayunk.

General manager Will Groves has spent the past four years working for the Big Burrito Restaurant Group, and is originally from southern West Virginia. He moved to Pittsburgh in 2005 to attend graduate school at Duquesne University and fell in love with the city and its’ people.

174? What’s up with that?

Check out our logo. What does that root thing look like? Think back to high-school math class. Yes, it’s painful for me to think about that too, but work with me here. It’s a square root symbol. So, 15218 plus 15221 is 30,439. The square root of 30,439 is? You guessed it, 174. (Actually, it’s 174.467762, but we’re restaurant people, we leave the decimals to those folks over at CMU.) So when friends have asked about the name, I’ve said that 174 is the “Regent Square root” of the two zip codes. Cheesy, but I like it.

What are we all about?

The biggest thing we’re about is the “174 community.” Giving back to and supporting the neighborhood is something we look forward to being able to do in a big way. We love the area, and want to make it the best it can be. This means: donating resources and time to the community, hosting events to get people from the rest of the city over here to check out the neighborhood and trying to make the 174 community an even more awesome place to live.

We’re also about the food. We wouldn’t be much of a restaurant if we weren’t. The phrase we’ve come up with that we like the best is “cultivated comfort food.” Cultivated, for us, means both grown and improved through hard work, and also refined and elegant. Comfort food means the food we like to eat. The food that makes us feel good. Nourishing food prepared with the best stuff we know how to find with the attention it deserves. So cultivated comfort food is food that’s interesting, food that’s fun, food that’s good for date night or good for dinner after a rough day at work.

That said, we want everyone to be able to enjoy our food. This is why we’re emphasizing vegetarian and vegan options as well. Every night, we will have at least a few vegetarian and vegan options to choose from.

So come over when we open in mid-summer (perfect sidewalk seating weather) and say hello.
