Fridge Surprise! A Chicken and Rice Slow Cooker Recipe

Use weird scraps and leftovers to make a delicious and versatile meal.

It's a fairly common occurence that I accidentally invent a good recipe whilst trying to rid my fridge of things that are going bad. Yesterday, I came up with a really good one that I deemed share-worthy. And for those who count calories, it's very healthy, and can contain a ton of veggies! And for any Weight Watchers folks out there, depending on how much rice you use, it's only about 8 points for a good sized serving! 

Ingredients:

Chicken

Whatever you have in your fridge that can be construed as Mexican food-like

Instructions:

- Take those frozen chicken breasts that you have in your freezer (however many you want) and thaw them in the microwave.

- Dump the thawed breasts in the crock pot

- Take that qarter of a jar of salsa you have in the fridge from your last party. Dump it in the crock pot.

- Take any weird little bell pepper remnants out of the fridge and throw them in the crock pot.

- Throw in that old bag of corn you've had in the freezer since Thanksgiving.

- Scour the fridge/freezer for any other veggies that might be good (peppers, beans, etc.)

- Dump in the 47 packets of Taco Bell sauces that have been accumulating in your fridge.

- Take the lime you've had in your fridge since you bought it to make gin and tonics (or to drink with Coronas) but then you forgot you had. Slice it in half. Squeeze all the juice into the crock pot. 

- Take everything out of your spice rack that might taste good (cumin, chili powder, oregano, onion powder, garlic powder, paprika, whatevs). Throw in a few good shakes of all of them.

- If it looks a little dry, throw in a splash of that cheap tequila you don't want to admit you have.

- Cook on low for ... I dunno, however long it takes. Occasionally shred chicken with a fork.

- Serve over the seven gallons of leftver rice (from Chinese or Indian food) in the fridge

Presto! Delicious! You could also wrap this delicious glop in a tortilla, serve in a taco shell, or use as a nacho topping. Yum!
